Taco Chicken

I seem to get motivated about once every month to do a whole bunch of stuff around the house. Suddenly all the mess and dirt get to me and I get to work cleaning it up. It always seems to happen at night too, which is quite inconvenient as I really should be going to bed. Anyone with me, or is it just my problem? That burst of motivation just came (thankfully not too late at night this time)… So I’m here, with a decently tidy house, clean kitchen, ready to work on a blog post! Finally!

This recipe comes, courtesy of middle sister. (Thanks, middle sister!). She gave me this idea while I was visiting her last fall. I was trying to come up with a meal plan for us so that we could go grocery shopping and to do so, I was looking at my Pinterest board. I rely on my Pinterest board for coming up with my weekly dinner plans. By the way, if you’re on Pinterest, search for and follow us (Open Pantry Policy). We post not only our own recipes but also recipes we recommend from other bloggers. I was listing off all these recipes and we decided on a couple to make, but then she asked if we could just do something more simple… like the taco chicken recipe she came up with. She explained what it was and I was like, that’s brilliant! I wish I could think in simple terms when it came to cooking but I always complicate things. This is a delicious and easy recipe that is quite sure to please the whole family. I leave out the salsa on little TJ’s chicken since I only have medium salsa and he’s not a fan of spice but I’m sure a mild would still work for any child (or adult) who isn’t a heat lover. Ingredients
  • 4 boneless, skinless chicken breasts (~700 g)
  • 1 pkg (35 g) taco seasoning (low sodium if desired)
  • 4 tbsp (60 mL) salsa of your choice
  • 4 tbsp (60 mL) shredded cheddar cheese

Ingredients
  • 4 boneless, skinless chicken breasts (~700 g)
  • 1 pkg (35 g) taco seasoning (low sodium if desired)
  • 4 tbsp (60 mL) salsa of your choice
  • 4 tbsp (60 mL) shredded cheddar cheese
Instructions
  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper for easy clean up, if desired.
  2. Spread the taco seasoning in a shallow bowl or plate. Take each chicken breast and coat with the taco seasoning. (If your chicken breasts are very thick, I suggest butterflying them to reduce cook time and give more flavour to the final product).
  3. Place coated chicken breasts in the lined baking dish. Spread 1 tbsp (15 mL) salsa over each chicken breast and then top with 1 tbsp (15 mL) shredded cheese.
  4. Place in preheated oven and bake for 30-40 minutes, or until the internal temperature reaches 165°F (74°C). Serve with rice and your favourite vegetable.

    Sounds good, Clarey. I’m always wary of packaged mixes-have you tried Club House Tex Mex? I always use it now in my Mexican dishes along with cumin and my go toos-onion and garlic powder. Going to try this on a salad!
