Preheat oven to 375°F (190°C). Line a baking dish with parchment paper for easy clean up, if desired.
Spread the taco seasoning in a shallow bowl or plate. Take each chicken breast and coat with the taco seasoning. (If your chicken breasts are very thick, I suggest butterflying them to reduce cook time and give more flavour to the final product).
Place coated chicken breasts in the lined baking dish. Spread 1 tbsp (15 mL) salsa over each chicken breast and then top with 1 tbsp (15 mL) shredded cheese.
Place in preheated oven and bake for 30-40 minutes, or until the internal temperature reaches 165°F (74°C). Serve with rice and your favourite vegetable.
