Ingredients
  • 6-7small zucchini
  • 1.5tsp salt
  • 1small onion
  • 2large eggs
  • 1/4cup flour(I used sprouted, but it is not necessary)
  • 2Tbsp nutritional yeast(optional, but adds a nice flavour)
  • 1tsp black pepper
  • butter(for frying)
Instructions
  1. Gather all of your ingredients.
  2. Wash and grate the zucchini.
  3. Place grated zucchini in a colander, and sprinkle with salt. Mix the salt in.
  4. Allow zucchini to sit, so that the salt draws out the water. I put my colander in a large bowl for about 30 minutes.
  5. White you wait, grate the onion.
  6. Squeeze the excess water out the zucchini, and place it in a bowl.
  7. Add the grated onion, eggs, flour, nutritional yeast (if using), and pepper.
  8. Melt some butter in a frying pan over medium-low heat, add some fritter mix (I could cook three 2-3 inch fritters at a time in my pan).
  9. Cook fritters until browned on each side. I would say it took between 4 and 6 minutes on each side.
  10. Enjoy! I like to eat mine as a side with bacon and eggs, or just by themselves with ketchup.
